I’ve teamed up with Brooke Meredith at A Conscious Collection to create some easy, delicious and nutritional meals.

Zucchini Pesto Pasta

Ingredients:

2 zucchinis

1/2 cup fresh basil

1/2 cup cashews

1/4 cup olive oil

pinch sea salt

pinch of ground pepper

1 clove of garlic

1 tbs goats cheese.

10 cherry tomatoes.

Pumpkin seeds optional.

Method:

Using a sprializer create your zucchini noodles and set aside.

In a small blender or food processor, pulse the basil, cashews, olive oil, sea salt, pepper, garlic, goats cheese until a pesto is formed.

Slice the cherry tomatoes and place in the bowl. Mix through pesto and top with pumpkin seeds to serve.
